MAKE, BAKE AND DECORATE YOUR OWN HALLOWEEN MONSTER COOKIES.
/Short on time, don't panic, it's never too late to make these Halloween monster cookies. This is a good one to keep the kids busy. Grab a packet of biscuits, some icing and an assortment of sweets and you're good to go. They're scary good, I promise.
October 31st is fast approaching so let's get in the mood for all things spooky by whipping up a batch of these Halloween monster cookies.
I started by making some basic butter biscuits but for a quick alternative you could grab a packet of store bought digestives or rich tea biscuits instead. All you need to do is spoon a little buttercream icing onto the top of each biscuit and decorate using any sweets you have on hand.
I particularly liked the mini marshmallows, they made great teeth and eyes but the strawberry laces came a close second. I loved that you could bend them to make any shape.

Basic Butter Biscuit (makes 16-20 large biscuits).
250g butter, softened,
140g Icing (confectioners') Sugar,
1 teaspoon Vanilla Extract,
1 large Egg Yolk,
375g Plain (all-purpose) Flour plus extra for dusting.
1. Beat the butter and sugar together in a bowl until pale and fluffy.
2. Add the vanilla extract and egg yolk. Mix well.
3. Sift and add the flour. Mix until it forms a dough.
You may need to use your hands until it forms a smooth ball of dough.
4. Wrap in cling film and refrigerate for an hour.
5. Preheat the oven to 190°c/375°F/Gas Mark 5.
6. Lightly flour your worktop and roll out your chilled dough. You may need to knead it a little when it first comes out the fridge.
I found it worked best if I rolled the dough no thinner than 1/4 inch.
7. Cut out your cookie shapes and place on a lined baking sheet.
8. Bake for 10-12 minutes until your biscuits are pale and golden.
9. Remove from oven and leave to cool completely before decorating.
Soft Buttercream Icing (makes enough for 16-10 cookies).
75g Butter, softened.
320g Icing Sugar,
1/2 teaspoon Vanilla Extract,
1-2 drops Almond Essence,
2/4 tablespoons Milk,
Food colouring gel.
1. Beat together the softened butter and icing sugar.
2. Add the vanilla and almond essence.
3. Add 2/4 tablespoons of milk until you have a smooth spreadable consistency. Add the milk 1 tablespoon at a time, I only needed 2 to get the right consistency.
4. Separate into 3 bowls and add a different colour food colouring gel or paste to each one.
5. Using the back of a spoon spread a little buttercream onto each biscuit and decorate.
Here's how I made my monster face cookies but really it's an anything goes kind of project. Grab some sweets and let your imagination go wild.
Any favourites? I think mine has to be the blue monster with an 'X' for an eye with the giant strawberry lace eyeball coming a close second but it's hard to choose. I love them all!
