Making your own decorated cookies doesn't have to be hard. Sometimes keeping it simple is the way to go especially if you're an inexperienced baker. With just a simple heart and rectangle cookie cutter you can make these sweet Valentine's sugar cookies.

Easy Valentine Cookies.

Valentine's Sandwich Cookies.
Ingredients:
Sugar Cookie Dough (homemade using the recipe below or store-bought)
Scalloped Rectangle Cookie Cutter (3-inch)
Pink Buttercream (see recipe below)
Optional: White chocolate for drizzling, heart-shaped sprinkles, powdered (icing) sugar for dusting
Sugar Cookie Recipe.
3 1/2 cups all-purpose flour
1/4 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
1 cup butter, softened
2 ounces cream cheese, softened
1 ¼ cups sugar
1 teaspoon vanilla extract
1 egg
Strawberry Buttercream Frosting.
1 cup unsalted butter, softened
1 teaspoon vanilla extract
6 tablespoons strawberry preserves
4 cups powdered sugar
1 tablespoon milk
1 drop of red food colouring (optional)
I'm all about simplicity and these cookies are no exception. Use my sugar cookie recipe (or grab some pre-made dough, I promise I won't tell!).
This recipe is a little bit different to the classic sugar cookie recipe as it uses cream cheese to help make them soft, fluffy and pillow-like.
How To Make Valentine’s Sugar Cookies.
Separate the dough into two balls, then flatten the balls into disks. Wrap each disk in plastic wrap and place it in the refrigerator to chill for at least one hour.
Grab a rolling pin and roll it out to about a 1/8th inch thick.
Take your rolled-out dough and use a 3-inch rectangle scalloped edge cookie cutter to cut out 48 cookies.
To get the full 48 combine the scraps and re-roll the dough until all cookies are cut. Alternatively, keep your cut-out hearts and make tiny heart-shaped sugar cookies instead.
Now comes the fun part! Use a smaller heart-shaped cutter to create a window in half of your cookies. If you've got little helpers around, this is a fantastic step for them to get involved in.
When ready to bake, preheat the oven to 375 degrees and line a baking sheet with parchment paper. Pop those lovely heart-shaped creations into the oven for 8-10 minutes and let the magic happen.
While they're baking, prepare a simple yet decadent pink buttercream using strawberry preserve to really up the flavour content.
Once your cookies have been baked and cooled, spread your gorgeous buttercream onto the solid halves.
Gently place the windowed cookies on top of the buttercream-covered ones.
The result? A beautiful, edible love letter-shaped biscuit with a sneak peek into the pink surprise inside.
Who said we can't add a sprinkle of extra love? Drizzle a bit of melted dark chocolate on top, sprinkle some heart-shaped sprinkles, or dust them with a touch of powdered sugar. Get creative – it's the little details that make your cookies uniquely yours.
How To Store Your Sugar Cookies.
Store your finished cookies at room temperature in an airtight container for up to 5 days.
If you need to stack your cookies in the container, place a piece of parchment paper or wax paper between the layers. This prevents the cookies from sticking together and preserves their decorations.
